- 2 pounds bone-in, skinless chicken, cut into bite-sized pieces
- 2 tablespoons Jamaican curry powder, divided
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon allspice
- 1 tablespoon fresh ginger, minced
- 4 cloves garlic, minced
For Cooking:
- 1 tablespoon vegetable oil
- 1 medium onion, sliced
- 2 sprigs fresh thyme or 1/2 teaspoon dried thyme
- 1 Scotch bonnet pepper, whole or chopped (optional)
- 2 medium potatoes, peeled and diced
- 1 1/2 cups water or chicken broth
- 2 green onions, sliced
- Juice of 1/2 lime (optional)
Instructions
- Marinate the Chicken: Season chicken with 1 tablespoon curry powder, salt, pepper, garlic powder, onion powder, allspice, ginger, and garlic. Marinate for at least 30 minutes.
- Cook the Chicken: Heat oil, add 1 tablespoon curry powder, then sear chicken. Add onion, thyme, Scotch bonnet pepper, and cook. Add potatoes and water, simmer covered for 25–30 minutes.
- Finish and Serve: Stir in green onions and lime juice. Serve hot with rice.
