For the Chicken:

  • 2 pounds bone-in, skinless chicken, cut into bite-sized pieces
  • 2 tablespoons Jamaican curry powder, divided
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon allspice
  • 1 tablespoon fresh ginger, minced
  • 4 cloves garlic, minced

For Cooking:

  • 1 tablespoon vegetable oil
  • 1 medium onion, sliced
  • 2 sprigs fresh thyme or 1/2 teaspoon dried thyme
  • 1 Scotch bonnet pepper, whole or chopped (optional)
  • 2 medium potatoes, peeled and diced
  • 1 1/2 cups water or chicken broth
  • 2 green onions, sliced
  • Juice of 1/2 lime (optional)

Instructions

  1. Marinate the Chicken: Season chicken with 1 tablespoon curry powder, salt, pepper, garlic powder, onion powder, allspice, ginger, and garlic. Marinate for at least 30 minutes.
  2. Cook the Chicken: Heat oil, add 1 tablespoon curry powder, then sear chicken. Add onion, thyme, Scotch bonnet pepper, and cook. Add potatoes and water, simmer covered for 25–30 minutes.
  3. Finish and Serve: Stir in green onions and lime juice. Serve hot with rice.

  • Adjust Scotch bonnet pepper to taste.
  • For extra richness, add coconut milk in the last 10 minutes of simmering.
