Ingredients
Scale
Fritter Bites
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/3 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon melted butter
- 1 cup fresh or frozen blueberries (if frozen, do not thaw)
- Nonstick spray or oil for greasing
Glaze
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat and Prepare Pan: Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin with nonstick spray or oil to ensure the fritter bites don’t stick.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon until well combined and evenly distributed.
- Combine Wet Ingredients: In a separate bowl, beat together the milk, large egg, vanilla extract, and melted butter until the mixture is smooth and homogenous.
- Combine Wet and Dry: Pour the wet ingredients into the dry ingredients bowl and stir gently until just combined, avoiding overmixing to keep the batter light and tender.
- Fold in Blueberries: Carefully fold the fresh or frozen blueberries into the batter, making sure not to crush them and evenly distributing them throughout.
- Fill Muffin Tin: Using a spoon, scoop the batter into the mini muffin cups, filling each about 3/4 full to allow room for rising during baking.
- Bake: Place the muffin tin in the preheated oven and bake for 12–15 minutes, or until the fritter bites turn golden brown and a toothpick inserted in the center comes out clean.
- Prepare Glaze: While the fritter bites cool slightly, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth and pourable to create a sweet glaze.
- Glaze and Serve: Dip each warm fritter bite into the glaze or drizzle the glaze over the top. Let the glaze set for a few minutes before serving to enjoy that perfect sweet finish.
Notes
- Best enjoyed fresh on the day of baking for optimal flavor and texture.
- Store any leftovers in an airtight container in the refrigerator for up to 2 days.
- To revive leftover fritter bites, reheat them for a few seconds in the microwave to regain a fresh-from-the-oven taste.
- If using frozen blueberries, do not thaw to prevent the batter from becoming too watery.
- For a dairy-free version, substitute milk and butter with plant-based alternatives.
