- 1/4 cup sour cream
- 1 large egg
- 1 teaspoon vanilla extract

- 1 cup fresh or frozen blueberries
- 1 tablespoon melted butter (for brushing)
- For the glaze:
- 1/2 cup powdered sugar
- 1–2 tablespoons milk
- 1/4 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a mini muffin tin.
- Prepare the batter: In a medium bowl, whisk together the dry ingredients. In another bowl, whisk the wet ingredients, then combine the wet and dry mixtures. Gently fold in the blueberries.
- Bake: Spoon the batter into the muffin tin and bake for 12–15 minutes until done.
- Glaze: Mix the glaze ingredients and drizzle over the fritter bites.
- Serve: Enjoy warm or at room temperature.
Notes
- For a crispier top, broil the fritter bites for 1–2 minutes after baking.
