- 2 cups cherry or grape tomatoes
- 1 red bell pepper, diced
- 1/2 small red onion, diced
- 3 cloves minced garlic
- 1 cup chopped baby spinach
Dairy
- 8 ounces feta cheese
- 4 large eggs
Oils and Seasonings
- 4 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon sea salt
- 1/2 teaspoon dried thyme
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon red pepper flakes
Optional Toppings
- Chopped fresh basil or fresh chives
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the vegetables and feta cheese.
- Prepare Vegetables: In a mixing bowl, combine cherry tomatoes, diced red bell pepper, diced red onion, minced garlic, and chopped baby spinach. Drizzle with olive oil and season with dried oregano, sea salt, dried thyme, ground black pepper, and red pepper flakes. Toss until evenly coated.
- Assemble in Baking Dish: Transfer the vegetable mixture to a baking dish or oven-safe skillet. Nestle the block or crumbled feta cheese into the center or evenly distributed throughout.
- Bake Vegetables and Feta: Place the dish in the preheated oven and bake for approximately 20 minutes, or until the vegetables are soft and the feta has softened and started to brown slightly on top.
- Add Eggs: Remove the dish from the oven and carefully crack the eggs over or around the hot vegetables and feta. Return the dish to the oven.
- Bake Eggs: Continue baking for another 8-10 minutes, or until the egg whites are set but the yolks remain runny or cooked to your preferred doneness.
- Garnish and Serve: Remove from oven and garnish with optional chopped fresh basil or chives. Serve immediately with crusty bread or as is for a wholesome meal.
Notes
- You can adjust the amount of red pepper flakes to control the spice level.
- Use fresh herbs as garnish to enhance flavor and visual appeal.
- For firmer yolks, bake eggs for a few extra minutes.
- This recipe pairs well with toasted bread or a light salad for a complete meal.
- Leftovers can be refrigerated and reheated gently to avoid overcooking the eggs.
