Main Ingredients:
- 3 cups cauliflower florets (about 1 small head), steamed and finely chopped
- 2 large eggs
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
Additional Ingredients:
- 2 green onions, finely sliced
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for frying)
Instructions
- Steam Cauliflower: Steam cauliflower florets until very tender, about 8–10 minutes. Let cool slightly, then finely chop or pulse in a food processor.
- Mix Ingredients: Transfer to a large bowl and mix with eggs, flour, Parmesan, green onions, garlic powder, salt, and pepper until well combined.
- Fry Fritters: Heat olive oil in a skillet over medium heat. Scoop about 2 tablespoons of mixture per fritter and flatten slightly in the pan. Cook for 3–4 minutes per side, or until golden brown and crispy.
- Serve: Transfer to a paper towel-lined plate and repeat with remaining mixture. Serve warm.
Notes
- Serve with sour cream, yogurt, or a dipping sauce of choice.
- You can make them gluten-free by using almond or oat flour.
- For crispier fritters, squeeze excess moisture from the cauliflower before mixing.
