Pancake Batter:
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup buttermilk
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons melted butter
Additional:
- 12 fully cooked beef breakfast sausage links, cut in half
- Nonstick cooking spray or oil for greasing
- Maple syrup for dipping
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C) and grease a mini muffin pan.
- Prepare Batter: Mix dry ingredients in one bowl and wet ingredients in another. Combine wet into dry, mix until just combined.
- Fill Mini Muffin Cups: Spoon batter into cups, add a sausage half into each, and bake for 12–15 minutes until golden.
- Serve: Let cool slightly and serve warm with maple syrup.
