Instructions
- Preheat the oven and prepare pans: Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans and line the bottoms with parchment paper.
- Mix dry and wet ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. In a separate bowl, combine the buttermilk, oil, eggs, vanilla, and coffee until well mixed.
- Combine wet and dry ingredients: Add the wet mixture to the dry ingredients and stir until just combined. Fold in the mashed blackberries and black gel food coloring, if desired.
- Bake the cakes: Divide the batter between the pans and bake for 30–35 minutes. Cool the cakes before frosting.
- Make the frosting: Beat butter until fluffy, then gradually add powdered sugar, blackberry puree, vanilla, and salt. Frost the cakes and decorate as desired.
