Description

Indulge in the dark allure of this Blackberry Velvet Gothic Cake, a decadent dessert that marries the richness of dark cocoa with the brightness of fresh blackberries. With a velvety texture and a hauntingly beautiful appearance, this cake is perfect for any occasion that calls for a touch of drama.

Ingredients

Scale

Cake:

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsweetened dark cocoa powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup brewed coffee (cooled)
  • 1 cup fresh or thawed blackberries (mashed)
  • black gel food coloring (optional)

For Blackberry Frosting:

  • 1 cup unsalted butter (softened)
  • 3–3 1/2 cups powdered sugar
  • 1/2 cup blackberry puree (strained)
  • 1 teaspoon vanilla extract
  • pinch of salt

For Decoration (optional):

  • fresh blackberries
  • edible black glitter
  • dark chocolate shavings

Instructions

  1. Preheat the oven and prepare pans: Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans and line the bottoms with parchment paper.
  2. Mix dry and wet ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. In a separate bowl, combine the buttermilk, oil, eggs, vanilla, and coffee until well mixed.
  3. Combine wet and dry ingredients: Add the wet mixture to the dry ingredients and stir until just combined. Fold in the mashed blackberries and black gel food coloring, if desired.
  4. Bake the cakes: Divide the batter between the pans and bake for 30–35 minutes. Cool the cakes before frosting.
  5. Make the frosting: Beat butter until fluffy, then gradually add powdered sugar, blackberry puree, vanilla, and salt. Frost the cakes and decorate as desired.

Notes

  • For a stronger berry flavor, reduce additional blackberry puree on the stovetop before adding it to the frosting.
  • This cake pairs well with dark chocolate ganache or a blackberry compote drizzle.
