These Blackstone Chicken Fajita Quesadillas are a delicious twist on traditional quesadillas, cooked to perfection on a Blackstone griddle. Packed with flavorful chicken, peppers, onions, and gooey cheese, they are easy to make and perfect for a quick and satisfying meal.

For the Chicken Fajita Quesadillas:

  • 1 pound boneless skinless chicken breasts, thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon fajita seasoning
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small red onion, sliced
  • 1½ cups shredded Mexican blend cheese
  • 4 large flour tortillas
  • cooking spray or oil for griddle
  • optional: sour cream, salsa, or guacamole for serving

Instructions

  1. Preheat and Prepare: Preheat your Blackstone griddle to medium-high heat and lightly oil the surface. Toss the sliced chicken with olive oil and fajita seasoning.
  2. Cook Chicken and Vegetables: Cook chicken on one side of the griddle for 5–6 minutes. Add peppers and onion to the other side, cook for 4–5 minutes, then mix everything together.
  3. Assemble Quesadillas: Reduce heat to medium-low. Lay tortilla flat, sprinkle with cheese, top with chicken mixture, add more cheese, fold tortilla over.
  4. Cook Quesadillas: Cook each side for 2–3 minutes until golden and cheese is melted. Repeat with remaining tortillas.
  5. Serve: Slice into wedges and serve with sour cream, salsa, or guacamole.
