For the Chicken Fajita Quesadillas:
- 1 pound boneless skinless chicken breasts, thinly sliced
- 1 tablespoon olive oil
- 1 tablespoon fajita seasoning
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small red onion, sliced
- 1½ cups shredded Mexican blend cheese
- 4 large flour tortillas
- cooking spray or oil for griddle
- optional: sour cream, salsa, or guacamole for serving
Instructions
- Preheat and Prepare: Preheat your Blackstone griddle to medium-high heat and lightly oil the surface. Toss the sliced chicken with olive oil and fajita seasoning.
- Cook Chicken and Vegetables: Cook chicken on one side of the griddle for 5–6 minutes. Add peppers and onion to the other side, cook for 4–5 minutes, then mix everything together.
- Assemble Quesadillas: Reduce heat to medium-low. Lay tortilla flat, sprinkle with cheese, top with chicken mixture, add more cheese, fold tortilla over.
- Cook Quesadillas: Cook each side for 2–3 minutes until golden and cheese is melted. Repeat with remaining tortillas.
- Serve: Slice into wedges and serve with sour cream, salsa, or guacamole.
