Ingredients
Scale
Pasta
- 8 oz penne pasta
Chicken
- 2 chicken breasts
- Salt to taste
- Pepper to taste
Sauce and Garnish
- 2 cups diced tomatoes
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 cup balsamic vinegar
Instructions
- Cook the pasta. Bring a large pot of salted water to a boil and cook the penne pasta according to the package instructions until al dente. Drain and set aside.
- Heat the skillet. Place a large skillet over medium heat and add the olive oil, allowing it to warm up for about a minute.
- Season and cook chicken. Season the chicken breasts generously with salt and pepper. Add them to the hot skillet and cook for 6-7 minutes on each side, or until the chicken is fully cooked through and no longer pink in the center.
- Rest and dice chicken. Remove the chicken from the skillet and let it rest for a few minutes to retain juices, then dice it into bite-sized pieces.
- Sauté garlic. In the same skillet, add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
- Add tomatoes, basil, and balsamic vinegar. Stir in the diced tomatoes, chopped basil, and balsamic vinegar. Cook the mixture for 2-3 minutes to combine the flavors and allow the sauce to slightly thicken.
- Combine pasta and chicken. Return the cooked pasta and diced chicken to the skillet, tossing everything together until evenly coated with the tomato-basil sauce.
- Serve. Serve the bruschetta chicken pasta warm, optionally garnished with additional fresh basil for extra aroma and color.
Notes
- For juicier chicken, marinate breasts in olive oil, garlic, and basil for 30 minutes before cooking.
- Use fresh, ripe tomatoes for the best flavor in the sauce.
- Feel free to add shredded mozzarella or Parmesan cheese on top before serving.
- This dish pairs well with a crisp green salad or garlic bread.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop.
