Description

Bruschetta Chicken Pasta combines the fresh flavors of classic Italian bruschetta with tender, juicy chicken and perfectly cooked penne pasta. This simple skillet dish features a vibrant tomato, basil, and balsamic vinegar sauce that coats the pasta and chicken, making a hearty yet refreshing meal that’s ready in just 35 minutes.

Ingredients

Scale

Pasta

  • 8 oz penne pasta

Chicken

  • 2 chicken breasts
  • Salt to taste
  • Pepper to taste

Sauce and Garnish

  • 2 cups diced tomatoes
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup balsamic vinegar

Instructions

  1. Cook the pasta. Bring a large pot of salted water to a boil and cook the penne pasta according to the package instructions until al dente. Drain and set aside.
  2. Heat the skillet. Place a large skillet over medium heat and add the olive oil, allowing it to warm up for about a minute.
  3. Season and cook chicken. Season the chicken breasts generously with salt and pepper. Add them to the hot skillet and cook for 6-7 minutes on each side, or until the chicken is fully cooked through and no longer pink in the center.
  4. Rest and dice chicken. Remove the chicken from the skillet and let it rest for a few minutes to retain juices, then dice it into bite-sized pieces.
  5. Sauté garlic. In the same skillet, add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
  6. Add tomatoes, basil, and balsamic vinegar. Stir in the diced tomatoes, chopped basil, and balsamic vinegar. Cook the mixture for 2-3 minutes to combine the flavors and allow the sauce to slightly thicken.
  7. Combine pasta and chicken. Return the cooked pasta and diced chicken to the skillet, tossing everything together until evenly coated with the tomato-basil sauce.
  8. Serve. Serve the bruschetta chicken pasta warm, optionally garnished with additional fresh basil for extra aroma and color.

Notes

  • For juicier chicken, marinate breasts in olive oil, garlic, and basil for 30 minutes before cooking.
  • Use fresh, ripe tomatoes for the best flavor in the sauce.
  • Feel free to add shredded mozzarella or Parmesan cheese on top before serving.
  • This dish pairs well with a crisp green salad or garlic bread.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop.
