- 1 pound boneless, skinless chicken breast (cut into bite-sized pieces)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cloves garlic (minced)
- 3 cups chicken broth
- 2 cups uncooked penne or rotini pasta
- 1/2 cup Buffalo wing sauce
- 4 oz cream cheese (cubed)
- 1/2 cup ranch or blue cheese dressing
- 1 cup shredded cheddar cheese
- 2 green onions (sliced)
- crumbled blue cheese (optional, for topping)
Instructions
- Prepare the Buffalo Chicken Pasta: Heat butter in a large pot or deep skillet over medium heat. Add the chicken, season with salt and pepper, and sauté until browned. Add garlic and cook for another minute.
- Cook the Pasta: Pour in the chicken broth, pasta, and Buffalo sauce. Bring to a boil, then simmer, covered, for 12–15 minutes until pasta is tender.
- Finish the Dish: Stir in cream cheese and dressing until melted. Add cheddar cheese, stir until combined. Remove from heat, let sit to thicken. Top with green onions and blue cheese if desired. Serve hot.

- Adjust Buffalo sauce to taste. For extra protein, add bacon or grilled chicken. Dish reheats well and can be made ahead for meal prep.
