Ground Beef Mixture:
- 1 pound ground beef or ground turkey
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 packet taco seasoning (or 2 tablespoons homemade mix)
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) corn, drained
- 1 can (10 ounces) diced tomatoes with green chilies
- 1 cup cooked rice
- 1/2 cup salsa
Toppings and Garnishes:
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup chopped fresh cilantro
- Sour cream, avocado, and lime wedges for serving
Instructions
- Prepare Ground Beef Mixture: Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned. Add onion and garlic, sauté until softened. Stir in taco seasoning, black beans, corn, diced tomatoes, rice, and salsa. Simmer for 5 minutes.
- Add Cheese: Sprinkle cheddar and Monterey Jack cheese over the mixture. Cover and cook until cheese is melted, about 2-3 minutes.
- Finish and Serve: Remove from heat, garnish with cilantro. Serve warm with sour cream, avocado slices, and lime wedges.
Notes
- For a spicier version, add jalapeños or extra chili powder.
