Ground Beef Mixture:

  • 1 pound ground beef or ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tablespoons homemade mix)
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 cup cooked rice
  • 1/2 cup salsa

Toppings and Garnishes:

  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro
  • Sour cream, avocado, and lime wedges for serving

Instructions

  1. Prepare Ground Beef Mixture: Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned. Add onion and garlic, sauté until softened. Stir in taco seasoning, black beans, corn, diced tomatoes, rice, and salsa. Simmer for 5 minutes.
  2. Add Cheese: Sprinkle cheddar and Monterey Jack cheese over the mixture. Cover and cook until cheese is melted, about 2-3 minutes.
  3. Finish and Serve: Remove from heat, garnish with cilantro. Serve warm with sour cream, avocado slices, and lime wedges.
