Ingredients
Scale
Chicken and Seasonings
- 4 chicken breasts (5-7 oz each), pounded to even thickness
- 2 teaspoons Italian seasoning
- 2 teaspoons sea or kosher salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cracked black pepper
- 1 tablespoon olive oil
Toppings
- 8 oz fresh mozzarella, sliced into 8 even pieces
- 2 vine-ripened tomatoes, sliced into ½ inch slices
- Fresh basil leaves, to taste
- Aged balsamic or balsamic glaze, to taste
Instructions
- Prepare the chicken: Pound each chicken breast to an even thickness of just under 1 inch to ensure they cook evenly.
- Season the chicken: In a small bowl, combine Italian seasoning, sea or kosher salt, garlic powder, onion powder, and cracked black pepper. Brush each chicken breast with olive oil, then evenly sprinkle the seasoning blend over all sides.
- Grill the chicken: Heat a grill to high heat. Place the seasoned chicken breasts on the hot grill and cook for 5-6 minutes per side, or until the internal temperature reaches 155°F, indicating they are almost fully cooked.
- Add toppings: Lay slices of fresh mozzarella on top of each chicken breast. Continue grilling for another 2-3 minutes until the cheese melts and the internal temperature reaches 165°F, ensuring the chicken is safely cooked through.
- Assemble and serve: Remove the chicken from the grill and place on a serving platter. Top with the sliced vine-ripened tomatoes and fresh basil leaves. Finish by seasoning with a pinch of salt and pepper to taste and drizzle generously with aged balsamic vinegar or balsamic glaze before serving.
Notes
- Make sure to pound the chicken evenly for uniform cooking.
- Use fresh mozzarella and ripe tomatoes for the best flavor and texture.
- Check internal temperature with a meat thermometer for safe cooking.
- Substitute balsamic glaze if you prefer a sweeter finishing touch.
- Can also be cooked on a stovetop grill pan if an outdoor grill is not available.
