Bread:
- 3 1/2 cups bread flour
- 1/2 cup whole wheat flour
- 1 1/2 teaspoons salt
- 1 cup active sourdough starter (fed)
- 1 1/4 cups lukewarm water
Caramelized Onions:
- 1 tablespoon olive oil
- 1 large yellow onion (thinly sliced)
- 1 teaspoon sugar
- 1 teaspoon balsamic vinegar
Additional:
- 1 1/2 cups shredded smoked Gouda cheese
Instructions
- Caramelize Onions: In a skillet, cook olive oil and onions over medium heat until deep golden brown. Add sugar and balsamic vinegar in the last 5 minutes. Set aside to cool.
- Prepare Dough: Mix flours and salt in a bowl. Add sourdough starter and water. Rest for 30 minutes. Incorporate onions and Gouda into the dough.
- Rise: Let dough rise at room temperature, performing stretch and folds. Shape into a boule, refrigerate overnight.
- Bake: Preheat oven with Dutch oven inside. Bake dough until golden and crusty. Cool before slicing.
