Ingredients
Scale
Glaze Ingredients
- 2 tablespoons Sugar
- 1 cup Soy Sauce (can substitute with tamari for gluten-free)
- 1/2 cup Water
Main Ingredients
- 1 can Spam, diced into 1-inch cubes
- 6 large Eggs
- 1/4 teaspoon Salt
- 1/4 teaspoon White Pepper
- 2 cups Cooked White Rice
Garnishes
- To taste Furikake
- To taste Green Onion, sliced
- To taste Fried Garlic
- Oil for cooking (as needed)
Instructions
- Prepare the Soy Glaze: In a mixing bowl, whisk together the soy sauce and water until well combined. Set aside this mixture for glazing the Spam later.
- Whisk the Eggs: Crack the large eggs into a bowl, add salt and white pepper, then whisk thoroughly until fully combined and slightly frothy to prepare for scrambling.
- Cook the Eggs: Heat a drizzle of oil in a non-stick pan over medium-low heat. Pour in the whisked eggs and gently stir with a spatula until the eggs are softly set but not overcooked, then remove from the pan and keep warm.
- Sear the Spam: In the same pan, add the diced Spam cubes. Cook for 1-2 minutes on each side until the Spam is nicely browned and crispy, creating a flavorful crust.
- Caramelize the Spam: Sprinkle the sugar evenly over the crispy Spam cubes, tossing to coat them well. Pour the soy sauce and water mixture into the pan and let it simmer for about 3-4 minutes, stirring occasionally, until the glaze thickens into a sticky, caramel coating on the Spam.
- Assemble the Dish: Spoon a generous portion of cooked white rice onto each plate. Top with the fluffy scrambled eggs, then layer the caramelized Spam on top.
- Garnish and Serve: Finish each serving by sprinkling furikake seasoning, fried garlic, and sliced green onions over the top to add layers of flavor, texture, and color. Serve immediately while warm.
Notes
- You can substitute tamari for soy sauce to make the dish gluten-free.
- Adjust the sugar quantity if you prefer a more or less sweet glaze on the Spam.
- The eggs can be cooked to your preferred style, but light scrambling works best for balance.
- Use fresh cooked rice for the best texture and warmth.
- Furikake adds a traditional Japanese flavor but can be omitted or replaced with sesame seeds if unavailable.
