Description

This Caramelized Spam and Eggs Delight is a savory and sweet breakfast favorite that combines crispy, caramel-glazed Spam with fluffy scrambled eggs served over steamed white rice. Enhanced with traditional Japanese furikake, fried garlic, and fresh green onions, this dish offers a perfect balance of salty, sweet, and umami flavors in just 20 minutes, making it a quick and satisfying meal for any time of day.

Ingredients

Scale

Glaze Ingredients

  • 2 tablespoons Sugar
  • 1 cup Soy Sauce (can substitute with tamari for gluten-free)
  • 1/2 cup Water

Main Ingredients

  • 1 can Spam, diced into 1-inch cubes
  • 6 large Eggs
  • 1/4 teaspoon Salt
  • 1/4 teaspoon White Pepper
  • 2 cups Cooked White Rice

Garnishes

  • To taste Furikake
  • To taste Green Onion, sliced
  • To taste Fried Garlic
  • Oil for cooking (as needed)

Instructions

  1. Prepare the Soy Glaze: In a mixing bowl, whisk together the soy sauce and water until well combined. Set aside this mixture for glazing the Spam later.
  2. Whisk the Eggs: Crack the large eggs into a bowl, add salt and white pepper, then whisk thoroughly until fully combined and slightly frothy to prepare for scrambling.
  3. Cook the Eggs: Heat a drizzle of oil in a non-stick pan over medium-low heat. Pour in the whisked eggs and gently stir with a spatula until the eggs are softly set but not overcooked, then remove from the pan and keep warm.
  4. Sear the Spam: In the same pan, add the diced Spam cubes. Cook for 1-2 minutes on each side until the Spam is nicely browned and crispy, creating a flavorful crust.
  5. Caramelize the Spam: Sprinkle the sugar evenly over the crispy Spam cubes, tossing to coat them well. Pour the soy sauce and water mixture into the pan and let it simmer for about 3-4 minutes, stirring occasionally, until the glaze thickens into a sticky, caramel coating on the Spam.
  6. Assemble the Dish: Spoon a generous portion of cooked white rice onto each plate. Top with the fluffy scrambled eggs, then layer the caramelized Spam on top.
  7. Garnish and Serve: Finish each serving by sprinkling furikake seasoning, fried garlic, and sliced green onions over the top to add layers of flavor, texture, and color. Serve immediately while warm.

Notes

  • You can substitute tamari for soy sauce to make the dish gluten-free.
  • Adjust the sugar quantity if you prefer a more or less sweet glaze on the Spam.
  • The eggs can be cooked to your preferred style, but light scrambling works best for balance.
  • Use fresh cooked rice for the best texture and warmth.
  • Furikake adds a traditional Japanese flavor but can be omitted or replaced with sesame seeds if unavailable.
