Dry Ingredients:

- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
Additional Ingredients:
- 1/2 cup unsalted butter, cold and cut into small cubes
- 1 cup shredded sharp cheddar cheese
- 3/4 cup cold buttermilk (plus more for brushing)
- 2 tablespoons chopped fresh chives or parsley (optional)
Instructions
- Preheat Oven: Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Prepare Dough: In a large bowl, whisk together the dry ingredients. Cut in the cold butter until mixture resembles coarse crumbs. Stir in cheese and herbs. Make a well in the center, pour in buttermilk, and gently combine.
- Shape Biscuits: Turn out dough onto a floured surface, pat into a rectangle, fold, and repeat. Cut out biscuits and place on baking sheet.
- Bake: Brush biscuits with buttermilk and bake for 12-15 minutes until golden brown.
- Serve: Serve warm with butter.

- Keep butter and buttermilk cold for flakiest biscuits.
- Substitute buttermilk with milk + lemon juice if needed.
