Description
Deliciously roasted cheesy cauliflower steaks are a perfect low-carb, vegetarian side dish or main. Tender cauliflower slices are seasoned with garlic, smoked paprika, and olive oil, then topped with melted sharp cheddar and Parmesan cheeses for a savory, satisfying flavor and texture.
Ingredients
Scale
Cauliflower Steaks
- 1 large head cauliflower
- 2 tablespoons olive oil
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
Cheese Topping
- 1 cup shredded sharp cheddar cheese
- ¼ cup grated Parmesan cheese
Garnish
- Chopped fresh parsley (optional)
Instructions
- Preheat Oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Prepare Cauliflower: Remove the outer leaves from the cauliflower and trim the stem, keeping the core intact to hold the steaks together. Carefully slice the cauliflower into ¾-inch thick slices to form ‘steaks’; you should get about 3 to 4 slices from the center.
- Season Cauliflower: Place the cauliflower steaks on the prepared baking sheet. Brush both sides of each steak evenly with olive oil. Sprinkle garlic powder, smoked paprika, salt, and black pepper over the steaks to evenly season.
- First Roast: Roast the cauliflower steaks in the preheated oven for 20 minutes, flipping them halfway through to ensure even cooking and browning.
- Add Cheese: Remove the baking sheet from the oven. Sprinkle the shredded sharp cheddar and grated Parmesan cheese evenly over each cauliflower steak.
- Second Roast: Return the cheesy cauliflower steaks to the oven and roast for an additional 8 to 10 minutes, or until the cheese is melted, bubbly, and golden, and the edges of the cauliflower are nicely browned.
- Garnish and Serve: Remove from the oven and garnish with chopped fresh parsley if desired. Serve immediately as a savory side or vegetarian main dish.
Notes
- Try a mix of cheeses such as mozzarella or Gruyère for a different flavor and texture.
- Serve as a hearty vegetarian main dish or a flavorful side dish.
- For extra crispy cheese topping, broil the cheesy cauliflower steaks for the final 1 to 2 minutes, watching carefully to prevent burning.
- Save leftover florets for soups, salads, or stir-fries to minimize waste.
