Description

A comforting and cheesy Chicken Broccoli Rice Casserole that is perfect for a family dinner or an easy weeknight meal. This casserole is a delicious combination of tender chicken, fluffy rice, and crisp broccoli in a creamy sauce, topped with melted cheddar cheese.

  • 2 cups cooked chicken, shredded or diced
  • 2 cups cooked white or brown rice
  • 2 cups broccoli florets, steamed until tender
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese, divided

For the topping:

  • 1/2 cup crushed Ritz crackers or breadcrumbs (optional)
  • 1 tablespoon melted butter

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Mix ingredients: In a large bowl, combine chicken, rice, broccoli, cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, pepper, and 1 cup of cheddar cheese. Mix well.
  3. Prepare casserole: Pour mixture into the baking dish, spread evenly. Sprinkle remaining 1/2 cup of cheese on top. Mix crackers or breadcrumbs with melted butter and sprinkle over cheese.
  4. Bake: Bake for 25–30 minutes until bubbly. Rest for 5 minutes before serving.
