For the casserole:
- 2 cups cooked chicken, shredded or diced
- 2 cups cooked white or brown rice
- 2 cups broccoli florets, steamed until tender
- 1 can (10.5 oz) condensed cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups shredded cheddar cheese, divided
For the topping:
- 1/2 cup crushed Ritz crackers or breadcrumbs (optional)
- 1 tablespoon melted butter
Instructions
- Preheat oven: Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Mix ingredients: In a large bowl, combine chicken, rice, broccoli, cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, pepper, and 1 cup of cheddar cheese. Mix well.
- Prepare casserole: Pour mixture into the baking dish, spread evenly. Sprinkle remaining 1/2 cup of cheese on top. Mix crackers or breadcrumbs with melted butter and sprinkle over cheese.
- Bake: Bake for 25–30 minutes until bubbly. Rest for 5 minutes before serving.
