  • 4 tablespoons olive oil
  • 4 tablespoons unsalted butter, divided


Instructions

  1. Prepare the chicken: Season the chicken breasts evenly with salt and pepper, then dredge each piece thoroughly in flour, shaking off excess to ensure a light coating.
  2. Sauté chicken: Heat olive oil and 2 tablespoons of butter in a large skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes on each side until they develop a golden crust and are cooked through. Remove the chicken from the skillet and set aside.
  3. Cook mushrooms: In the same skillet, add the sliced mushrooms. Sauté for about 5 minutes or until the mushrooms turn golden brown and have released their moisture.
  4. Deglaze with Marsala wine: Pour in the dry Marsala wine, using a wooden spoon to scrape up any browned bits from the bottom of the skillet. Let the wine simmer for a couple of minutes until slightly reduced.
  5. Add chicken broth and simmer: Pour in the low-sodium chicken broth and return the cooked chicken breasts to the skillet. Simmer everything together for about 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  6. Finish the sauce: Stir in the remaining 2 tablespoons of butter until melted and the sauce turns glossy, coating the chicken beautifully.
