- 1 1/2 pounds boneless, skinless chicken tenders or thin-sliced breasts
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 cup dry white wine (or chicken broth)
- juice of 1 lemon
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1/4 cup chopped parsley
- 1/4 cup grated Parmesan cheese
For the Garlic Parmesan Rice:
- 1 cup long grain white rice
- 2 cups chicken broth
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1/3 cup grated Parmesan cheese
Instructions
- Prepare the Chicken: Dredge chicken in seasoned flour and cook until golden and cooked through. Set aside.
- Make the Sauce: Sauté garlic, deglaze with wine or broth, add lemon juice and red pepper flakes. Simmer chicken in the sauce.
- Prepare the Rice: Sauté garlic, add rice, chicken broth, and simmer until tender. Stir in Parmesan.
- Serve: Plate the chicken scampi over the garlic Parmesan rice.
