For the Cookie Dough:
- 1 cup freeze-dried strawberries, finely crushed
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup white chocolate chips
For Dipping:
- 8 oz dark chocolate, melted
- additional crushed freeze-dried strawberries, for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the butter and sugars: In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
- Add egg and vanilla: Mix in the egg and vanilla extract until well combined.
- Stir in strawberries: Stir in the crushed freeze-dried strawberries.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture.
- Add white chocolate chips: Fold in the white chocolate chips.
- Bake: Scoop dough onto baking sheet and bake for 10–12 minutes until golden.
- Dip in chocolate: Dip half of each cookie in melted dark chocolate and let set.
- Garnish: Sprinkle with additional crushed strawberries if desired.
- Cool and serve: Allow the chocolate to harden before serving.
Notes
- You can substitute white chocolate chips with milk or semi-sweet chocolate chips.
