  • 1/2 teaspoon cinnamon

For the Drizzle (Optional):

  • 2 tablespoons cream cheese (softened)
  • 1 tablespoon milk
  • 1 tablespoon powdered sugar or sugar-free alternative

Instructions

  1. Crepes: In a mixing bowl, whisk together oat flour, protein powder, eggs, almond milk, Greek yogurt, cinnamon, vanilla extract, and salt until smooth. Let the batter rest for 5–10 minutes to thicken slightly. Lightly grease a nonstick skillet and heat over medium-low. Pour about 1/4 cup of batter into the pan, swirling to create a thin layer. Cook for 1–2 minutes until the edges begin to lift, then gently flip and cook for another 30 seconds. Repeat with remaining batter.
  2. Filling: In a small bowl, mix Greek yogurt, maple syrup, and cinnamon for the filling. Spread a spoonful over each crepe, then roll or fold.
  3. Drizzle (Optional): For the drizzle, mix cream cheese, milk, and powdered sugar until smooth and drizzle over the top of the crepes.
