Description
These Coconut Pineapple Bites are a refreshing and tropical snack or dessert featuring fresh pineapple chunks coated in a sweet shredded coconut mixture. Optionally enhanced with Greek yogurt and honey for creaminess and sweetness, then chilled to firm up for a perfect bite-sized treat garnished with fresh mint leaves.
Ingredients
Scale
Pineapple
- 1 medium fresh pineapple, peeled and cut into bite-sized chunks
Coconut Coating
- 1 cup shredded coconut (sweetened or unsweetened, based on preference)
- 1/4 cup Greek yogurt (optional, for creaminess)
- 2 tbsp honey or maple syrup (optional, for added sweetness)
Garnish
- Fresh mint leaves (optional)
Instructions
- Prepare the Pineapple: Peel and cut the fresh pineapple into bite-sized chunks. Set any excess juice aside and place the pineapple pieces in a mixing bowl.
- Prepare the Coconut Coating: In a separate bowl, combine the shredded coconut with Greek yogurt and honey or maple syrup if using. Mix until you achieve a cohesive, sticky mixture. For a simpler version, skip the yogurt and honey and just use shredded coconut.
- Coat the Pineapple: Using your hands or a fork, take each pineapple chunk and thoroughly coat it in the coconut mixture, making sure all sides are covered. For a lighter version, simply roll the pineapple in shredded coconut until fully coated.
- Chill the Bites: Arrange the coated pineapple bites on a serving platter or tray. Refrigerate for at least 30 minutes so the coating firms up and flavors meld together.
- Garnish and Serve: Just before serving, garnish with fresh mint leaves if desired. Enjoy your Coconut Pineapple Bites cold for a refreshing snack or dessert.
Notes
- This snack is best served chilled to maintain the coating and refreshing taste.
- You can use either sweetened or unsweetened shredded coconut depending on your sweetness preference.
- Greek yogurt and honey or maple syrup are optional but add extra creaminess and natural sweetness.
- Fresh mint leaves add a nice aroma and visual appeal but are optional.
- Keep refrigerated leftovers in an airtight container for up to 2 days for best quality.
