Ingredients
Scale
Ground Beef Mixture:
- 1 pound ground beef
- 1 small onion, diced
- 1 cup frozen corn kernels
- 1 cup canned black beans, drained and rinsed
- 1 cup diced tomatoes (canned or fresh)
- 1 cup cooked rice
- 1/2 cup barbecue sauce
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Garnish:
- 2 tablespoons chopped fresh cilantro for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 375 degrees Fahrenheit.
- Cook Ground Beef: In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is softened, about 6-8 minutes. Drain excess fat.
- Season and Combine: Stir in chili powder, garlic powder, salt, and pepper. Add the corn, black beans, diced tomatoes, cooked rice, and barbecue sauce. Mix well to combine.
- Transfer and Bake: Transfer the mixture to a greased 9×9-inch baking dish and spread evenly. Sprinkle shredded cheddar cheese on top. Bake for 20-25 minutes until the cheese is melted and bubbly.
- Serve: Remove from the oven, let cool slightly, and garnish with chopped cilantro if desired before serving.
Notes
- For extra heat, add diced jalapeños or a dash of hot sauce.
- You can substitute ground turkey for beef for a leaner option.
- Serve with sour cream or guacamole for added flavor.
