Description

A hearty and flavorful Cowboy Casserole Dinner that combines ground beef, beans, corn, and rice in a cheesy, barbecue-infused dish. This easy-to-make one-dish meal is a perfect comfort food option for a cozy night in.

Ingredients

Scale

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 cup frozen corn kernels
  • 1 cup canned black beans, drained and rinsed
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup cooked rice
  • 1/2 cup barbecue sauce
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Garnish:

  • 2 tablespoons chopped fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375 degrees Fahrenheit.
  2. Cook Ground Beef: In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is softened, about 6-8 minutes. Drain excess fat.
  3. Season and Combine: Stir in chili powder, garlic powder, salt, and pepper. Add the corn, black beans, diced tomatoes, cooked rice, and barbecue sauce. Mix well to combine.
  4. Transfer and Bake: Transfer the mixture to a greased 9×9-inch baking dish and spread evenly. Sprinkle shredded cheddar cheese on top. Bake for 20-25 minutes until the cheese is melted and bubbly.
  5. Serve: Remove from the oven, let cool slightly, and garnish with chopped cilantro if desired before serving.

Notes

  • For extra heat, add diced jalapeños or a dash of hot sauce.
  • You can substitute ground turkey for beef for a leaner option.
  • Serve with sour cream or guacamole for added flavor.
