Description

Cowboy Caviar is a colorful and flavorful bean salad that is perfect for parties or as a healthy appetizer. This Tex-Mex dish is a zesty blend of black beans, black-eyed peas, corn, and fresh veggies, all tossed in a tangy dressing.

  • 1 can (15 oz) black-eyed peas, drained and rinsed

  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, finely chopped
  • 2 medium tomatoes, seeded and diced
  • 1 jalapeño pepper, seeded and minced
  • 1/4 cup fresh cilantro, chopped

For the Dressing:

  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • Juice of 1 lime
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder

Instructions

  1. Prepare the Cowboy Caviar: In a large mixing bowl, combine the black beans, black-eyed peas, corn, bell peppers, onion, tomatoes, jalapeño, and cilantro.
  2. Make the Dressing: In a separate small bowl, whisk together the olive oil, red wine vinegar, lime juice, sugar, salt, black pepper, and chili powder until well blended.
  3. Combine and Chill: Pour the dressing over the vegetable mixture and toss until evenly coated. Cover and refrigerate for at least 1 hour to allow the flavors to meld.
  4. Serve: Serve chilled with tortilla chips or as a side dish.
