- 2 medium tomatoes, seeded and diced
- 1 jalapeño pepper, seeded and minced
- 1/4 cup fresh cilantro, chopped
For the Dressing:
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- Juice of 1 lime
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder
Instructions
- Prepare the Cowboy Caviar: In a large mixing bowl, combine the black beans, black-eyed peas, corn, bell peppers, onion, tomatoes, jalapeño, and cilantro.
- Make the Dressing: In a separate small bowl, whisk together the olive oil, red wine vinegar, lime juice, sugar, salt, black pepper, and chili powder until well blended.
- Combine and Chill: Pour the dressing over the vegetable mixture and toss until evenly coated. Cover and refrigerate for at least 1 hour to allow the flavors to meld.
- Serve: Serve chilled with tortilla chips or as a side dish.

- You can make this up to 24 hours ahead of time for the best flavor.
- For a spicier version, leave the seeds in the jalapeño or add a pinch of cayenne pepper.
