  • 2 tablespoons coconut oil or butter
  • 1/2 cup coconut milk (or regular milk)
  • 2 tablespoons chopped cilantro or green onion (optional)

Instructions

  1. Prepare the Coconut Curry Soup: In a large pot, sauté onion in coconut oil until soft. Add garlic, ginger, curry paste, and turmeric. Pour in coconut milk, vegetable broth, soy sauce, and brown sugar. Add carrots, snap peas, and corn. Simmer until vegetables are tender.
  2. Make the Dumplings: Mix flour, baking powder, and salt. Cut in oil or butter, then add milk and herbs. Drop spoonfuls of dough into the soup. Cover and cook for 10–12 minutes.
  3. Stir in spinach and lime juice before serving. Season with salt and pepper to taste.
