Description

This Creamy Chicken Tortilla Soup is a comforting and flavorful dish with a Mexican-inspired twist. It’s loaded with tender chicken, beans, corn, and a blend of spices, all simmered in a creamy broth. Topped with crispy tortilla strips, it’s a satisfying meal perfect for any time of year.

Ingredients

Scale

For the Soup:

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeño, seeded and minced (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups cooked shredded chicken
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 cup frozen corn
  • 1 (15 oz) can black beans, rinsed and drained
  • 4 cups chicken broth
  • 1/2 cup heavy cream or half-and-half
  • 1/2 cup sour cream
  • juice of 1 lime
  • 1/4 cup chopped fresh cilantro (optional)
  • crispy tortilla strips or crushed tortilla chips for topping

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion and sauté for 3–4 minutes until softened.
  2. Stir in garlic and jalapeño (if using) and cook for another minute.
  3. Add cumin, chili powder, smoked paprika, salt, and pepper, stirring to coat the aromatics.
  4. Add the shredded chicken, diced tomatoes with green chilies, corn, black beans, and chicken broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes.
  5. Stir in the heavy cream and sour cream, and cook for another 3–5 minutes over low heat. Squeeze in the lime juice and stir in fresh cilantro if desired.
  6. Serve hot, topped with crispy tortilla strips or crushed tortilla chips.

Notes

  • For a thicker soup, mash some of the beans or blend a portion before adding cream.
  • This soup freezes well—just leave out the dairy and stir it in when reheating.
