Description

Main Ingredients:

  • 2 medium yellow squash, sliced into 1/4-inch rounds
  • 1/2 cup breadcrumbs (plain or Italian-style)
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • olive oil spray

Instructions

  1. Prepare the Coating: In a shallow bowl, whisk the egg. In another bowl, mix the breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
  2. Coat the Squash: Dip each squash slice into the egg, then press into the breadcrumb mixture to coat both sides.
  3. Air Fry: Place the coated squash rounds in a single layer in the air fryer basket, lightly spray the tops with olive oil spray, and air fry at 400°F for 10–12 minutes, flipping halfway through, until golden and crispy.
  4. Serve: Repeat with the remaining squash slices and serve immediately with your favorite dipping sauce.

Notes

  • For extra crunch, use panko breadcrumbs.
  • These also reheat well in the air fryer for a few minutes at 375°F.
  • Serve with ranch, marinara, or garlic aioli.
