Main Ingredients:
- 2 medium yellow squash, sliced into 1/4-inch rounds
- 1/2 cup breadcrumbs (plain or Italian-style)
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg
- olive oil spray
Instructions
- Prepare the Coating: In a shallow bowl, whisk the egg. In another bowl, mix the breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
- Coat the Squash: Dip each squash slice into the egg, then press into the breadcrumb mixture to coat both sides.
- Air Fry: Place the coated squash rounds in a single layer in the air fryer basket, lightly spray the tops with olive oil spray, and air fry at 400°F for 10–12 minutes, flipping halfway through, until golden and crispy.
- Serve: Repeat with the remaining squash slices and serve immediately with your favorite dipping sauce.
Notes
- For extra crunch, use panko breadcrumbs.
- These also reheat well in the air fryer for a few minutes at 375°F.
- Serve with ranch, marinara, or garlic aioli.
