For the Beef Filling:
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion (finely diced)
- 2 cloves garlic (minced)
- 2 chipotle peppers in adobo sauce (finely chopped)
- 1 tablespoon adobo sauce
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For Assembly:
- 12 small corn tortillas
- 1 cup shredded cheddar or Monterey Jack cheese
- Vegetable oil for frying
- Chopped cilantro and sour cream for serving
Instructions
- Prepare the Beef Filling: Heat olive oil in a skillet over medium heat. Sauté onion until soft, then add garlic. Cook ground beef until browned. Add chipotle peppers, adobo sauce, cumin, paprika, salt, and pepper. Cook for a few minutes, then set aside.
- Assemble the Tacos: Warm tortillas and spoon beef mixture onto each. Sprinkle with cheese, roll tightly, and secure with a toothpick.
- Fry the Tacos: Heat vegetable oil in a skillet. Fry rolled tacos until crispy and golden on all sides.
- Serve: Drain tacos on paper towels and serve warm with cilantro, sour cream, or salsa.
Notes
- To bake instead of fry, brush rolled tacos with oil and bake at 425°F (220°C) for 18–20 minutes, turning halfway through. You can also air fry at 400°F for 10–12 minutes. Add shredded lettuce, avocado, or pico de gallo for toppings.
