Description

These Crispy Rolled Chipotle Beef Tacos are a delightful twist on traditional tacos, with a spicy, smoky flavor and a satisfying crunch. Perfect for a fun dinner or party dish!

For the Beef Filling:

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion (finely diced)
  • 2 cloves garlic (minced)
  • 2 chipotle peppers in adobo sauce (finely chopped)
  • 1 tablespoon adobo sauce
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For Assembly:

  • 12 small corn tortillas
  • 1 cup shredded cheddar or Monterey Jack cheese
  • Vegetable oil for frying
  • Chopped cilantro and sour cream for serving

Instructions

  1. Prepare the Beef Filling: Heat olive oil in a skillet over medium heat. Sauté onion until soft, then add garlic. Cook ground beef until browned. Add chipotle peppers, adobo sauce, cumin, paprika, salt, and pepper. Cook for a few minutes, then set aside.
  2. Assemble the Tacos: Warm tortillas and spoon beef mixture onto each. Sprinkle with cheese, roll tightly, and secure with a toothpick.
  3. Fry the Tacos: Heat vegetable oil in a skillet. Fry rolled tacos until crispy and golden on all sides.
  4. Serve: Drain tacos on paper towels and serve warm with cilantro, sour cream, or salsa.

Notes

  • To bake instead of fry, brush rolled tacos with oil and bake at 425°F (220°C) for 18–20 minutes, turning halfway through. You can also air fry at 400°F for 10–12 minutes. Add shredded lettuce, avocado, or pico de gallo for toppings.
