Description

This Crock Pot Lemon Chicken recipe delivers tender, flavorful chicken breasts cooked low and slow with a tangy lemon sauce. A simple blend of Italian seasoning, fresh lemon juice, and chicken broth creates a deliciously bright and savory dish perfect for an easy weeknight meal. The chicken is lightly coated in flour and seared to develop a golden crust before slow cooking until juicy and infused with zesty lemon goodness.

Ingredients

Scale

Chicken & Coating

  • 1/4 cup all-purpose flour
  • 2 pounds boneless, skinless chicken breasts, cut into thirds
  • salt and pepper, to taste

Cooking Ingredients

  • 1/4 cup butter
  • 1 packet Good Seasons Italian dressing/seasoning mix
  • 1/2 cup fresh lemon juice
  • 1/2 cup chicken broth

Instructions

  1. Prepare the chicken: Rinse the chicken pieces under water, then pat dry. Lightly coat each piece in all-purpose flour and set aside to prepare for searing.
  2. Set up crock pot: Plug in the crock pot and set it to low heat to begin warming while you prepare the chicken.
  3. Sear first half of chicken: In a large non-stick skillet over medium-high heat, melt 2 tablespoons of butter. Add half the flour-coated chicken pieces without overcrowding the pan. Season with salt and pepper. Cook each side for 3 to 4 minutes until golden brown, forming a delicious crust without fully cooking the chicken.
  4. Transfer first batch to crock pot: Remove the seared chicken from the skillet and place it directly into the crock pot.
  5. Sear second half of chicken: Add the remaining 2 tablespoons butter to the skillet. Repeat the searing process with the remaining chicken pieces, cooking each side 3 to 4 minutes until golden brown. Transfer these pieces to the crock pot as well.
  6. Add seasonings and liquids: Sprinkle the packet of Good Seasons Italian dressing/seasoning evenly over all the chicken in the crock pot. Pour the fresh lemon juice and chicken broth over the top, ensuring the flavors seep into the chicken.
  7. Slow cook the chicken: Cover the crock pot with its lid and cook on low heat for 3 hours. This allows the chicken to become tender and infused with the lemon and Italian seasoning flavors.
  8. Serve: Once cooked, serve the lemon chicken pieces whole or shredded, accompanied by the flavorful lemon sauce from the crock pot. Enjoy this simple yet vibrant dish!

Notes

  • For extra zest, add a few lemon slices to the crock pot during cooking.
  • You can substitute chicken thighs for breasts if preferred; adjust cooking time accordingly.
  • The Italian seasoning packet can be replaced with an equivalent mix of dried oregano, basil, parsley, and garlic powder.
  • Serve with steamed vegetables or over rice to soak up the lemon sauce.
  • Make sure not to overcrowd the skillet when searing to get an even golden crust.
