Description

This Crockpot cheesy potato casserole is a comforting and easy-to-make dish featuring tender diced potatoes baked slowly with creamy cheddar cheese, sour cream, and savory bacon. Perfect for a hearty side or a cozy family meal, it combines rich flavors and creamy textures with minimal effort using a slow cooker.

Ingredients

Scale

Potatoes and Cheese

  • 4 large potatoes (about 1.5 kg), peeled and diced
  • 2 cups (about 200 g) cheddar cheese, shredded

Other Ingredients

  • 1 can (10.5 oz or 300 g) cream of chicken soup
  • 1 cup (240 ml) sour cream
  • 1 medium onion, finely chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 6 slices of crispy bacon, cooked and crumbled
  • 1/2 cup (120 ml) milk (optional, for a creamier texture)

Instructions

  1. Prepare Ingredients: Peel and dice the potatoes into small cubes, ensuring uniform pieces for even cooking.
  2. Combine Potatoes and Cheese: In a large mixing bowl, mix the diced potatoes with the shredded cheddar cheese thoroughly to start layering your flavors.
  3. Add Creamy Mixture: Stir in the cream of chicken soup, sour cream, chopped onion, garlic powder, and black pepper into the potato and cheese mixture until well combined.
  4. Prepare Crockpot: Grease the inside of your crockpot with cooking spray or olive oil to prevent sticking, then pour in the potato mixture evenly.
  5. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender and the casserole is cooked through.
  6. Add Bacon: About 30 minutes before serving, sprinkle the crumbled crispy bacon on top and gently stir to incorporate it, then continue cooking until ready to serve warm.

Notes

  • For a creamier texture, milk can be added to the mixture before cooking.
  • Use fresh potatoes for best texture; avoid instant or pre-cut ones.
  • You can substitute cream of chicken soup with cream of mushroom soup for a slightly different flavor.
  • Ensure the bacon is cooked until crispy for the best texture contrast.
  • This recipe is best served warm and can be reheated in the crockpot or oven.
