Ingredients
Scale
Chicken and Sauce
- 4 boneless skinless chicken breasts
- 1 can (10.5 ounces) cream of chicken soup
- 1 can (10.5 ounces) cream of mushroom soup
- 3/4 cup sour cream
- 1/2 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon black pepper
Stuffing and Toppings
- 1 box (6 ounces) Stove Top stuffing mix
- 2 tablespoons unsalted butter, melted
- 2 cups frozen mixed vegetables (optional)
Instructions
- Prepare the crockpot: Spray the inside of a 6-quart slow cooker with nonstick cooking spray to prevent sticking and facilitate easy cleanup.
- Layer the chicken: Place the 4 boneless skinless chicken breasts in the bottom of the crockpot in an even layer.
- Mix the sauces: In a medium bowl, whisk together the cream of chicken soup, cream of mushroom soup, sour cream, chicken broth, garlic powder, onion powder, dried thyme, and black pepper until well combined. This mixture will provide a rich and flavorful sauce for the chicken and stuffing.
- Add half the sauce over chicken: Spread half of the soup and sour cream mixture evenly over the chicken breasts to start building layers of flavor.
- Layer the stuffing: Sprinkle the dry stuffing mix evenly over the sauce-covered chicken in the crockpot to create a thick layer.
- Butter and remaining sauce: Drizzle the melted unsalted butter evenly over the stuffing layer, then pour the remaining half of the soup mixture over the top to keep the stuffing moist as it cooks.
- Add vegetables (optional): If using, spread the frozen mixed vegetables evenly over the top of the stuffing layer for added nutrition and color.
- Cook: Cover the crockpot with its lid and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is thoroughly cooked and tender.
- Stir and serve: Just before serving, gently stir the contents of the crockpot to combine the chicken, stuffing, and sauce, blending the flavors together for a comforting meal.
