Description

Indulge in layers of rich chocolate cake, fluffy peppermint mousse, and creamy chocolate pudding in this decadent dessert that’s perfect for the holiday season.

Cake:

  • 1 box (15.25 ounces) chocolate cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon peppermint extract

Peppermint Mousse:

  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar

Chocolate Pudding Layer:

  • 1 package (3.9 ounces) instant chocolate pudding mix
  • 2 cups cold milk

Additional:

  • 1 1/2 cups crushed peppermint candies or candy canes
  • 1 1/2 cups semisweet chocolate chips, melted
  • Chocolate shavings and extra crushed peppermint for garnish

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F. Prepare chocolate cake mix as per package directions, adding peppermint extract. Bake in two 9-inch round pans and cool.
  2. Make Peppermint Mousse: Beat cream cheese and granulated sugar until smooth. Whip heavy cream with powdered sugar until stiff peaks form. Fold half into cream cheese mixture.
  3. Prepare Chocolate Pudding: Whisk pudding mix with cold milk until thickened.
  4. Assemble the Cake: Place one cake layer on a plate. Spread with half the peppermint mousse, drizzle with melted chocolate, and sprinkle crushed peppermint. Add second cake layer, spread pudding, drizzle more chocolate, spread remaining mousse, and top with reserved whipped cream. Garnish and chill before serving.

Notes

  • This dessert can also be made as a trifle by layering cubes of cake, mousse, pudding, and peppermint candies in a glass bowl.
  • For extra peppermint flavor, add crushed candy canes into the cake batter.
