Ingredients
Scale
Plantain and Frying
- 1 cup Oil (for frying the plantains until golden and crispy)
- 2 very ripe Plantains (sliced thinly lengthwise)
Minced Beef Filling
- 1.5 cups Minced beef (seasoned and ready for flavor)
- 1 tablespoon Cilantro or parsley (minced for a fresh burst of flavor)
Egg Wash
- 2 medium Eggs (whisked for the roll coating)
- 0.5 teaspoon Salt (to enhance the egg wash flavor)
- 0.33 teaspoon Pepper (freshly-cracked for a bit of spice)
- 2 tablespoons Oil (for frying the coated rolls)
Instructions
- Heat oil and fry plantains: Begin by heating 1 cup of oil over medium-high heat in a frying pan. Add the thinly sliced plantains and fry each side for about 2-3 minutes until golden brown and crispy. Remove the fried plantains and place them on a paper towel to absorb excess oil.
- Assemble the rolls: Lay the fried plantain slices out leaving about a 2.5 cm (1 inch) gap between each slice. Fill each slice with the seasoned minced beef mixture, pressing it down evenly. Secure each roll with a toothpick to prevent unrolling during cooking.
- Prepare the egg wash: In a small bowl, whisk together the eggs, salt, and freshly cracked pepper until well combined.
- Coat and cook the rolls: Heat 2 tablespoons of oil in a clean frying pan over medium heat. Dip each plantain roll into the egg mixture, ensuring it is well coated, then place it carefully in the pan. Spoon additional egg mixture over the tops of the rolls for an even coating. Cook for about 2 minutes on each side, or until golden brown and cooked through.
- Serve and enjoy: Remove the rolls from the pan and place on a serving plate. Serve warm, either on their own or accompanied by your favorite dipping sauce as a delightful appetizer or snack.
Notes
- Use very ripe plantains for natural sweetness and easier rolling.
- Thinly slicing plantains lengthwise ensures even frying and flexibility for rolling.
- Season minced beef well according to taste before assembling.
- Be cautious when frying the egg-coated rolls to avoid burning; use medium heat and watch closely.
- Remove toothpicks before eating to avoid injury.
