Ingredients
Scale
Zucchini Noodles
- 3 medium Zucchini (Spiralized into noodles)
Shrimp Scampi Sauce
- 2 tablespoons Olive Oil (For sautéing)
- 2 tablespoons Unsalted Butter (For the scampi sauce)
- 4 cloves Garlic (Minced)
- 1/2 teaspoon Crushed Red Pepper Flakes (Adjust to taste)
- 1 pound Large Raw Shrimp (Peeled and deveined)
- 1/2 cup White Wine (Like Pinot Grigio)
- 2 tablespoons Lemon Juice (Freshly squeezed)
Garnishes & Seasoning
- 1/4 cup Grated Parmesan Cheese (Optional, for serving)
- 1/4 cup Parsley (Chopped, for garnish)
- Salt (to taste)
- Pepper (to taste)
Instructions
- Prepare Zucchini Noodles: Spiralize the zucchini into noodles using a spiralizer or vegetable peeler and set them aside for later use.
- Heat Fat in Skillet: In a large skillet over medium-high heat, melt the olive oil together with the unsalted butter until fully combined and hot.
- Sauté Garlic and Red Pepper: Add minced garlic and crushed red pepper flakes to the skillet and cook for 1-2 minutes until fragrant, being careful not to burn the garlic.
- Cook Shrimp: Add the peeled and deveined shrimp to the skillet and sauté for 4-5 minutes until they turn pink and opaque. Remove the shrimp from the pan and set aside.
- Deglaze Pan: Pour in the white wine to deglaze the skillet, scraping up any browned bits from the bottom, and cook for 2-3 minutes until the wine has reduced slightly.
- Add Zucchini Noodles and Shrimp Back: Return the shrimp and zucchini noodles to the pan, cooking together for an additional 2 minutes until the noodles soften slightly but retain some bite.
- Season and Finish: Stir in freshly squeezed lemon juice, then season with salt and pepper according to your taste preferences.
- Plate and Garnish: Transfer the shrimp scampi and zucchini noodles to serving plates. Garnish with grated Parmesan cheese and chopped parsley for added flavor and color.
Notes
- For a non-alcoholic version, substitute the white wine with chicken broth or vegetable broth.
- Be careful not to overcook zucchini noodles as they can become soggy quickly.
- Adjust crushed red pepper flakes to control the level of heat in the dish.
- Use fresh lemon juice for the best bright and tangy flavor.
- Peeling and deveining shrimp beforehand saves time when cooking.
