Mousse Base
- 1 cup Heavy Whipping Cream (Ensure cream is chilled.)
- 1/4 cup Powdered Sugar (Add stability to the whipped cream.)
- 1 teaspoon Vanilla Extract (Use vanilla bean for a more intense flavor.)
- 1 teaspoon Unflavored Gelatin Powder (Optional, use agar-agar for vegetarian.)
- 2 tablespoons Cold Water (If using gelatin.)
Instructions
- Cook Raspberries: Gently place fresh raspberries and granulated sugar in a saucepan over low heat. Cook them for about 5-7 minutes until the berries burst and release their juices.
- Strain Puree: Once softened, strain the Raspberry mixture through a fine sieve to create a smooth puree. Set aside to cool slightly.
- Add Lemon Juice: Stir lemon juice into the cooled raspberry puree if you prefer a brighter, tangier flavor. This step is optional.
- Prepare Gelatin: If using gelatin, sprinkle it over cold water and let it bloom for 5 minutes. Then gently heat until completely dissolved, and allow to cool slightly before adding to the raspberry puree.
- Whip Cream: In a chilled mixing bowl, whip the heavy cream and powdered sugar together until stiff peaks form. Be careful not to over-whip to maintain a soft, airy texture.
- Fold Puree into Cream: Carefully fold the raspberry puree into the whipped cream in three additions. Use gentle folding to preserve the light and airy texture.
- Chill Mousse: Spoon or pipe the mousse into serving dishes and refrigerate for at least two hours to allow the flavors to meld and the mousse to set.
