Description

Instructions

  1. Cook the Pasta: Boil elbow macaroni in salted water according to the package instructions until al dente. Drain the macaroni and rinse under cold water to stop the cooking process and cool the pasta. Set aside.
  2. Prepare the Dressing: In a large mixing bowl, whisk together mayonnaise, yellow mustard, apple cider vinegar, sweet pickle relish, paprika, onion powder, garlic powder, salt, and pepper until smooth and well combined.
  3. Add Eggs and Veggies: Gently fold in the chopped hard-boiled eggs, celery, red onion, and fresh parsley into the dressing mixture to evenly distribute all ingredients without breaking up the eggs too much.
  4. Combine with Pasta: Add the cooled macaroni to the bowl with the dressing and vegetables, mixing carefully until everything is well coated and combined.
