Description

This Doritos Taco Salad is a vibrant, flavorful dish perfect for quick lunches or casual dinners. Combining seasoned ground beef, fresh vegetables, black beans, shredded cheddar cheese, and crunchy nacho cheese Doritos, all tossed with your favorite dressing, this salad offers a satisfying blend of textures and tastes in just 20 minutes.

Ingredients

Scale

Meat

  • 1 pound lean ground beef
  • 1 packet (1 ounce) taco seasoning

Produce

  • 3 to 4 Romaine lettuce hearts (rinsed then chopped)
  • 1 cup black beans (rinsed)
  • 1 large tomato, chopped OR sliced cherry tomatoes
  • Fresh cilantro (optional)

Dairy

  • 1/2 cup shredded cheddar cheese

Pantry

  • 1 ½ cups nacho cheese Doritos (broken into bite-size pieces)
  • 1 cup Catalina dressing OR your favorite salad dressing (ranch dressing suggested as an alternative)

Instructions

  1. Brown the Beef: Heat a large skillet over medium-high heat. Add the lean ground beef, breaking it up with a spoon as it cooks. Continue to cook until browned and fully crumbled. Drain any excess grease.
  2. Season the Meat: Add the taco seasoning packet along with the amount of water indicated on the seasoning packet. Stir well and bring to a boil. Reduce heat to low and simmer for 10 minutes to let the flavors meld. Remove from heat and allow the meat to cool slightly.
  3. Prepare the Salad Base: In a large salad bowl, combine the chopped Romaine lettuce, rinsed black beans, chopped or sliced tomatoes, and shredded cheddar cheese. Add the slightly cooled seasoned ground beef to the bowl and gently toss to mix all ingredients evenly.
  4. Chill (Optional): You can serve the salad immediately or cover and refrigerate until ready to eat. Avoid adding the Doritos chips until just before serving to keep them crunchy.
  5. Add Chips and Dressing: When ready to serve, add the bite-sized broken nacho cheese Doritos and your choice of dressing, such as Catalina or ranch. Toss the salad gently to evenly coat all ingredients with the dressing and distribute the chips throughout. Optionally, garnish with fresh cilantro for added aroma and color.

Notes

  • Do not add Doritos chips until just before serving to maintain their crunchiness.
  • Feel free to swap the Catalina dressing with ranch or your favorite dressing depending on taste preference.
  • Fresh cilantro adds a nice herbal touch but is optional based on your liking.
  • You can add more vegetables like corn or avocado for extra flavor and texture.
  • This salad works great as a light meal or a party dish to share with friends and family.
