Ingredients

Pasta:

  • 12 oz rotini or bowtie pasta, cooked and cooled

Veggies:

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup black olives, sliced

Cheese & Dressing:

  • 1/2 cup mozzarella pearls or cubed mozzarella
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup Italian dressing (store-bought or homemade)

Seasoning:

  • 1 tablespoon chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Boil pasta until al dente, then cool under cold water.
  2. Prepare the Salad: Combine pasta, tomatoes, cucumber, bell pepper, red onion, olives, mozzarella, and Parmesan in a bowl.
  3. Add Dressing: Pour Italian dressing over the salad, toss well to coat.
  4. Season and Chill: Season with salt, pepper, parsley. Chill for 30 minutes before serving.
