Description

This English Muffin Breakfast Pizza recipe combines savory breakfast sausage, creamy sawmill gravy, fluffy scrambled eggs, and melted mild cheddar cheese on toasted English muffins, finished under the broiler for a quick and satisfying morning meal.

Ingredients

Scale

For the Sausage and Gravy

  • 8 oz breakfast sausage
  • 1/4 cup sausage drippings (reserved from cooked sausage)
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • Salt, to taste
  • Black pepper, to taste

For the Breakfast Pizzas

  • 4 English muffins, split
  • 4 large eggs
  • 1 dash milk (for scrambled eggs)
  • 1 cup mild cheddar cheese, shredded

Instructions

  1. Cook Sausage: In a cast iron skillet, cook the breakfast sausage over medium heat until well done and browned. Remove the cooked sausage from the pan and set aside, reserving 1/4 cup of the drippings in the skillet.
  2. Make Sawmill Gravy: Add the flour to the reserved sausage drippings in the skillet. Cook over medium heat, stirring constantly, until the flour is golden and fragrant. Slowly whisk in the milk, continuing to stir until the mixture thickens into a smooth sawmill gravy. Season with salt and pepper to taste. Keep warm.
  3. Toast English Muffins: While preparing the gravy, lightly toast the English muffins until just golden and slightly crisp. Set aside.
  4. Scramble Eggs: In a separate skillet, whisk the eggs with a dash of milk for fluffiness. Cook over medium heat, stirring frequently to scramble until eggs are soft and fully cooked. Remove from heat.
  5. Assemble Breakfast Pizzas: Preheat the oven broiler. On a baking sheet, arrange the toasted English muffin halves. Spread a generous spoonful of sawmill gravy over each muffin half. Top with scrambled eggs, crumbled cooked sausage, and shredded mild cheddar cheese.
  6. Broil to Finish: Place the baking sheet under the preheated broiler. Broil for 2-4 minutes, monitoring closely, until the cheese is melted, bubbly, and slightly golden. Remove from oven and serve immediately.

Notes

  • Use a cast iron pan to enhance flavor when cooking the sausage and gravy.
  • Adjust the milk quantity slightly if the gravy is too thick or thin to your preference.
  • Keep a close eye while broiling to prevent burning the cheese.
  • This recipe serves 4 but can easily be doubled for a larger group.
  • For a spicier version, try adding red pepper flakes to the gravy or sausage.
