Ingredients

Scale

Sweet Potato Fries:

  • 2 large sweet potatoes, peeled and cut into thin fries
  • 3 tablespoons cornstarch
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Roasted Garlic Tahini Yogurt Dip:

  • 1 whole head garlic
  • 1 teaspoon olive oil (for roasting garlic)
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 1/4 teaspoon salt
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 425°F. Line two baking sheets with parchment paper.
  2. Prepare the sweet potato fries: Soak cut sweet potato fries in cold water for 30 minutes, then drain and pat dry. Toss with cornstarch, olive oil, smoked paprika, garlic powder, salt, and pepper. Bake in a single layer until crispy and golden.
