Roasted Garlic Tahini Yogurt Dip:
- 1 whole head garlic
- 1 teaspoon olive oil (for roasting garlic)
- 1/2 cup plain Greek yogurt
- 2 tablespoons tahini
- 1 tablespoon lemon juice
- 1 tablespoon water
- 1/4 teaspoon salt
- Chopped fresh parsley for garnish
Instructions
- Preheat the oven: Preheat the oven to 425°F. Line two baking sheets with parchment paper.
- Prepare the sweet potato fries: Soak cut sweet potato fries in cold water for 30 minutes, then drain and pat dry. Toss with cornstarch, olive oil, smoked paprika, garlic powder, salt, and pepper. Bake in a single layer until crispy and golden.
- Roast the garlic: Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast until soft. Squeeze out roasted garlic cloves.
- Make the dip: Mash roasted garlic with Greek yogurt, tahini, lemon juice, water, and salt until smooth.
- Serve: Serve hot fries with the dip, garnished with parsley.
