Description

This Famous Red Lobster Shrimp Scampi recipe delivers succulent, tender shrimp cooked in a rich, garlicky white wine sauce accented with lemon, Italian seasoning, and parmesan cheese. Perfectly seared in olive oil and finished with butter and fresh parsley, it’s an elegant, yet easy-to-make dish ready in just 25 minutes. Serve it over pasta, with crusty bread, or your favorite sides for a restaurant-quality meal at home.

Ingredients

Scale

Shrimp

  • 1 lb medium shrimp, peeled and deveined
  • 1 tablespoon pure olive oil

Sauce

  • 2 tablespoons garlic, finely chopped
  • 1 1/2 cups white wine (Chardonnay recommended)
  • 1/2 fresh lemon, juice only
  • 1 teaspoon Italian seasoning
  • 1/2 cup softened butter
  • 1 tablespoon parsley, chopped
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the Shrimp: Heat olive oil in a cast iron skillet over medium heat. Add the peeled and deveined shrimp and cook them for about 2-3 minutes per side, or until they become tender and opaque. Once cooked, remove the shrimp from the skillet and set aside.
  2. Prepare the Sauce: Using the same skillet, add the finely chopped garlic and sauté for 2-3 minutes until fragrant but not browned. Pour in the white wine and fresh lemon juice, then cook the mixture until the wine reduces by half, approximately 5 minutes.
  3. Finish the Sauce: Stir in the Italian seasoning. Reduce the heat to low and add the softened butter, stirring continuously until the butter is fully melted and the sauce becomes smooth.
  4. Combine and Serve: Return the cooked shrimp to the skillet and toss them in the sauce until well coated. Stir in the chopped parsley and season with salt and pepper to taste. Finally, sprinkle grated Parmesan cheese on top.
  5. Serve: Serve the shrimp scampi hot. It pairs beautifully with crusty bread, over cooked pasta, or alongside your preferred side dishes for a complete meal.

Notes

  • Use Chardonnay for a balanced wine flavor; however, any dry white wine can work.
  • Ensure not to overcook the shrimp to maintain their tenderness.
  • For a richer flavor, you may add a pinch of crushed red pepper flakes.
  • This dish can be doubled easily for larger gatherings.
  • Leftover scampi is best eaten the same day for optimal freshness.
