  • 2/3 cup beef broth

  • 8 oz Brussels sprouts, trimmed and quartered (about 3 cups)
  • 1/2 cup shredded Gruyère cheese


Instructions

  1. Prepare the Steak: Cut the sirloin steak into thin strips and season them evenly with salt and pepper to enhance the meat’s natural flavors.
  2. Caramelize the Onions: Melt the butter in a large skillet over medium heat, then add the thinly sliced onions. Cook for about 10 minutes, stirring occasionally, until the onions start to soften and get translucent.
  3. Add Balsamic Vinegar and Sugar: Stir in the balsamic vinegar and sugar with the onions and continue cooking for another 5 to 10 minutes, stirring often, until the onions are deeply caramelized and sweet.
  4. Sear the Steak: Push the caramelized onions to the side of the skillet. Add the seasoned steak strips to the empty space and cook for 3 to 5 minutes, turning occasionally, until the beef is browned on all sides.
  5. Simmer with Vegetables: Pour the beef broth into the skillet, then add the thinly sliced red potatoes and quartered Brussels sprouts. Stir gently to combine all ingredients.
  6. Cook Vegetables: Cover the skillet and let everything simmer for 10 to 15 minutes, stirring occasionally, until the potatoes and Brussels sprouts are tender and cooked through.
  7. Melt the Cheese and Serve: Sprinkle the shredded Gruyère cheese evenly over the top of the steak and vegetables. Cover the skillet again for about 1 minute to allow the cheese to melt. Serve immediately while hot.
