 - 2 tablespoons fresh parsley chopped
 - juice of 1/2 lemon (optional)
 
Instructions
- Cut and Rice Cauliflower: Cut cauliflower into florets and pulse in a food processor until it resembles rice.
 - Sauté Garlic and Butter: In a large skillet, melt butter over medium heat. Add garlic and cook for 1 minute until fragrant.
 - Cook Cauliflower Rice: Stir in cauliflower rice, salt, and pepper. Cook for 5 to 7 minutes, stirring occasionally, until tender but not mushy.
 - Finish and Serve: Remove from heat, stir in parsley, and finish with a squeeze of lemon juice if desired. Serve warm as a side dish.
