Instructions

  1. Prepare the Garlic Butter Shrimp: Heat olive oil and butter in a large skillet over medium heat. Add minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant. Add the shrimp, salt, and pepper, cooking for 2–3 minutes per side until the shrimp turn pink and opaque. Squeeze in lemon juice and stir to coat evenly. Remove from heat.
  2. Assemble the Stacks: Use a round mold or small bowl lined with plastic wrap. Start by layering 1/2 cup of cooked rice at the bottom. Add a few spoonfuls of diced cucumber and avocado on top of the rice. Finish by placing the garlic butter shrimp as the top layer. Press gently to shape the stack, then invert onto a serving plate.
  3. Garnish and Serve: Sprinkle chopped fresh cilantro over the top and add a squeeze of fresh lemon juice. Serve immediately with lemon wedges on the side.
