Description

Cauliflower and Mushroom Roast:

  • 1 medium head cauliflower, cut into florets
  • 8 oz cremini or button mushrooms, sliced
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Optional:

  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Prepare the vegetables: In a large bowl, combine cauliflower florets and sliced mushrooms. Drizzle with olive oil and sprinkle with minced garlic, thyme, salt, and pepper. Toss until the vegetables are evenly coated.
  3. Roast the vegetables: Spread the mixture on the baking sheet in a single layer. Roast for 25–30 minutes, stirring once halfway through, until the cauliflower is golden and tender and the mushrooms are browned.
  4. Finish and serve: Remove from the oven and sprinkle with fresh parsley before serving, if desired.

Notes

  • Add a sprinkle of grated Parmesan cheese during the last 5 minutes of roasting for extra flavor.
