Cauliflower and Mushroom Roast:
- 1 medium head cauliflower, cut into florets
- 8 oz cremini or button mushrooms, sliced
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Optional:
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Prepare the vegetables: In a large bowl, combine cauliflower florets and sliced mushrooms. Drizzle with olive oil and sprinkle with minced garlic, thyme, salt, and pepper. Toss until the vegetables are evenly coated.
- Roast the vegetables: Spread the mixture on the baking sheet in a single layer. Roast for 25–30 minutes, stirring once halfway through, until the cauliflower is golden and tender and the mushrooms are browned.
- Finish and serve: Remove from the oven and sprinkle with fresh parsley before serving, if desired.
Notes
- Add a sprinkle of grated Parmesan cheese during the last 5 minutes of roasting for extra flavor.
- This dish pairs well with grilled chicken, steak, or pasta.
