Description

Main Cookie Dough:

  • 1 box German chocolate cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Coconut Pecan Topping:

  • 1/2 cup evaporated milk
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded sweetened coconut
  • 1/2 cup chopped pecans

Instructions

  1. Prepare the Cookie Dough: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Mix cake mix, oil, eggs, and vanilla until a dough forms. Scoop onto baking sheet and bake for 8–10 minutes.
  2. Make the Coconut Pecan Topping: Combine milk, sugar, butter, and egg yolk in a saucepan. Cook until thickened. Remove from heat, add vanilla, coconut, and pecans. Cool.
  3. Top and Serve: Place a spoonful of topping on each cookie. Optionally, drizzle with melted chocolate. Enjoy!
