Chicken Tenders:
- 1 1/2 lbs chicken tenders
Marinade:
- 1/4 cup olive oil
- 3 tablespoons fresh lemon juice
- 3 cloves garlic, minced
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Marinate the Chicken: In a large bowl or zip-top bag, combine olive oil, lemon juice, garlic, red wine vinegar, oregano, thyme, salt, and pepper. Add the chicken tenders and toss to coat. Marinate in the refrigerator for at least 30 minutes.
- Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Remove chicken from the marinade and grill for 3–4 minutes per side until fully cooked. Let the chicken rest before serving.
