For the Avocado Salsa:
- 1 ripe avocado (diced)
- 1/4 cup red onion (finely chopped)
- 1/2 cup cherry tomatoes (quartered)
- 1/4 cup fresh cilantro (chopped)
- juice of 1 lime
- 1/2 jalapeño (finely chopped, optional)
For Serving:
- 8 small corn tortillas
Instructions
- Preheat the Grill: Preheat a grill or grill pan to medium-high heat.
- Prepare the Shrimp: In a bowl, toss the shrimp with olive oil, chili powder, cumin, garlic powder, paprika, salt, and black pepper until evenly coated. Grill the shrimp for 2–3 minutes per side until cooked through.
- Make the Avocado Salsa: Combine avocado, red onion, cherry tomatoes, cilantro, lime juice, and jalapeño in a bowl.
- Warm Tortillas: Grill tortillas for about 30 seconds per side.
- Assemble Tacos: Place shrimp on tortillas, top with avocado salsa, and serve.
