Instructions
- Preheat the grill: Preheat grill or grill pan to medium-high heat.
- Prepare the shrimp: In a bowl, toss shrimp with olive oil, chili powder, smoked paprika, cumin, garlic powder, cayenne (if using), salt, and pepper until evenly coated. Grill shrimp for 2–3 minutes per side, or until pink and opaque.
- Make the avocado salsa: Combine avocado, tomato, red onion, jalapeño, lime juice, and cilantro in a bowl. Season with salt to taste.
- Warm the tortillas: Warm tortillas on the grill for 20–30 seconds per side.
- Assemble the tacos: Layer cabbage or lettuce, grilled shrimp, and avocado salsa on the tortillas. Serve immediately with extra lime wedges.
Notes
- For a smoky twist, grill shrimp on skewers and char the tortillas directly over an open flame.
