  • 1 can (14 oz) hearts of palm (drained and chopped)
  • 1/2 cup diced red bell pepper

  • 1 clove garlic (minced)
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley (chopped)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg (beaten, for egg wash)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Sauté vegetables: In a skillet, heat olive oil over medium heat. Sauté red onion and red bell pepper until slightly softened. Add garlic and cook for 1 more minute.
  3. Add hearts of palm: Stir in hearts of palm, Dijon mustard, smoked paprika, salt, pepper, and parsley. Cook for a few more minutes, then let cool slightly.
  4. Prepare pastry: Roll out puff pastry and cut into equal rectangles or circles. Spoon filling onto one half, fold over, and seal edges.
  5. Bake: Brush with beaten egg, place on baking sheet, and bake for 18–22 minutes until golden and crisp. Cool slightly before serving.
